Holiday in the Philippines Part 2

So here I am, day three it’s Wednesday July 09th 2008 still finding it hard to believe I am here and even harder to believe I have met the best friend anyone could ever imagine to have.
Oh I forgot to mention that late on Tuesday afternoon the airport delivered my suitcase, which was a relief as I had some gifts for Jenh in there and was able to give them to her just before she left.
Ah a text message from Bobby saying “Morning Sir, I am in the lobby, what is your schedule for today”
Nothing planned for today as tomorrow Thursday have invited Jenh to the hotel and I’m cooking one of my favourite English dishes, well I expect I will turn it into a 3 coarse meal, and get Bobby to have a word with the staff to see if I can lay-up the table in style!
So after a breakfast at the restaurant on the 12th floor it’s off to the Mall with Bobby & Larry to do some serious food shopping. I’m wondering if I can get everything I need?
I feel like a Celebrity Chef, walking round pointing at this & picking up that while Larry is pushing the shopping trolley and Bobby is negotiating or bartering deals for me, as the locals are looking with wonderment on there faces as to who I am?
Think I better get a case of beer for these two hard working friends of mine and with all this hard work shopping… well I had a lot to think about! Has made me hungry.
So stop off at The Aristocrat Restaurant my favourite place to eat, but so expensive! It cost me all of £9 - £10 for the three of us!!
I can’t think of many better ways to spend an afternoon sat outside a restaurant in the warm eating exotic food and a cold beer watching all the beautiful women pass by! Marvellous.
So back to the hotel a few beers with now my adopted brothers Bobby, Larry & joined by Lino & then an early night as I have an important day tomorrow.
Thursday and it seems that all the hotel staff have got knowledge that I am cooking a meal for Miss Jenny as they now call her, wanting to know what the menu is?
Well I have plenty of help, Bobby is busy ordering all the necessary table wear from the room boy and unbeknown to me until now Larry used to be a top Chef, so is busy peeling this and opening that intrigued at what I am cooking.
Better ring Jenh find out if she’ll be on time? 6pm. OK that’s fine, plenty of time as I have prepared the starter of melon balls, strawberries, kiwi fruit & banana slices which I’ll do later as they go brown otherwise, and drizzled over this is 2 - 3 tablespoons of fine Port! Hmmm. Better have a glass to see if it’s OK! Any excuse I know.
So for the main coarse, boiled potatoes & mixed vegetables with, 1st fry a finely chopped onion, about 3 or 4 finely chopped tomatoes & finely chopped mushrooms in some olive oil for about 10 -15 minutes
Add a chicken stock cube salt & pepper, mixed herbs & some Worchester sauce & lemon juice with a glass of wine, then add the chopped up bite size chicken breast, cover, turn heat down low & slowly steam pan fry for half an hour.
For dessert strawberry ice cream, a bottle of white wine chilling in the fridge and a box of Ferrero Rosso chocolates for after… job done!
With over an hour to spare before I need to start cooking as I have already fried off the onion tomato & mushroom so just about 20 - 30 minutes everything will be ready.
Time for a couple of well earned beers and a chat with my newly found brothers.
Five thirty better start cooking, every things in place, even the waiter came down from the restaurant to make sure we had everything and it was all in the right place!
Five minutes to go… phone rings, Jenh is running late! Will now not arrive until 6 - 6.30... shit! Quick turn off that cooker. One good thing this dish will be OK as I have an electric cooker & the rings take ages to cool down. Well more beer then lads!
Now I have mentioned in part one of this epilogue that Jenh is a late comer! So here I am now with outside the hotel with an audience of hotel staff wondering where she is? As it is now almost 7pm.
Eventually we have phone contact & it seems that the taxi driver forgot to fuel his car & is now driving slower than a snail! Estimated time of arrival now is 9 - 9.30pm.
Finally about 9.45 & Jenh arrives with youngest R. a ten year old with the most gorgeous cheeky smile I’ve ever seen!
No need for a sorry or an excuse just get your asses up stairs and lets eat!
Maybe it was a little over cooked after over a 4 hr delay but hey! Us men are used to waiting for you women, and to have such a gorgeous mother & come for dinner, what’s a few hours wait among friends!

Now i'm back home the food here seems quite mundane!
I will certainly miss the food i ate, let alone all the wonderful people i met.
